M.U.L.E.
I was told by Scott Marshall that M.U.L.E. was developed single-handedly by Nick Eastridge.

Here is Tom's reply when I asked if Ren & Stimpy on the GB was done by Eastridge Technology:
Yeah, Gray Matter in Canada did the entire Snes version and I also worked on the gameboy art at Gray Matter while the rest of the game was done by a company out of New Jersey if I recall correctly, it's been 20+ years :)
